my be the variable was not translated and the code should be &product; :-)

Definitely. That was a bit over-translated. ;-) 
 
It has to be 
 
    &product; 
 
which will then be expanded to the product name.

it says in french "the install of the product is finished", so somewhere in the
french install langage file (I suggest a grep, I have no idea of where it is :-)

Changed to &product; in installation.fr.po. Should be in for Beta4
