When GNOME desktop application font is set to a higher number, Evolution preferences window creeps out at the bottom past the screen boundary.  Eventually, you no longer can see the "Apply" or "Save/OK" buttons.  

By the time you get to size 16 or 18, the window is completely out of bounds.  In my particular setup, I am using Andale Sans font.
