[doc] Explain wicked vs. NetworkManager

Currently this logic is only (partly) explained in the Admin guide at https://susedoc.github.io/doc-sle/main/html/SLES-administration/cha-nm.html As you can switch from wicked to NM during installation, we need this in the Quickinstall and Deployment guides, too. We need to mention that NM is not supported for servers.
