It would be great if we had an on screen keyboard available for the installation in case we're installing on a device without a keyboard.

As a workaround for now it is possible to install from the Gnome live image by enabling the on screen keyboard in Gnome's accessibility settings. Tested today on a Steam Deck.

No. That would be forbiddingly expensive to implement and to maintain.

Plugging in some USB keyboard that everybody who can afford a computer has around anyway is not exactly rocket science.

Even less so since you discovered the on-screen keyboard in that GNOME live image as a workaround.
